Israel is a place with many names, many stories, and many different climates. Expect to get hit in the face with thousands of years of (oftentimes tumultuous) history, even after simply stepping out of the airport. The easiest thing to say in order to describe this country is that you may feel both out of breath and reenergized after your visit. Tel Aviv is the cultural and economic center of the country, with a lengthy and beautiful beachside. It's a city that doesn't stop moving with much of its population being made up of young people. Go from exploring the Art Museum to eating the best pita and falafel on Ibn Gvirol, to tasting your way through the colorful Carmel market. Make sure to see Jerusalem during your journey through the Holy Land. A lot has changed in the thousands of years since the city's rise. On the other hand, many places have remained "stuck in time" like the Western Wall or the City of David. Various visionaries left their marks on the land, including King David, King Solomon, and Judah the Maccabee. If you have some extra time, take a few days for exploring of Israel's south and the Negev desert. Especially, explore the Mitzpe Ramon crater.
